Added to that, our event team will deliver a professional seamless service to your tables ensuring your guests are happy throughout.

Here, Wade shares with us all that goes into creating an extra special Swancar menu…

Q. Where do you take your inspiration from to create such a beautiful menu?

Wade: I’ve been a chef for more than 20 years and have been at Swancar for the last five. I absolutely love what I do and I’m always looking for new ideas and inspiration. I love experimenting and taking recipes from cookbooks and different places that I’ve visited and adding my own touches. When we create new dishes, it’s not just about the kitchen team, our wedding planners also get involved in tasting and feeding back on how they look.

Q. Why do you love what you do?

Wade: When I first visited Swancar, I fell in love with the place. We’re lucky to have a close-knit team that’s passionate about what they do and that shows in the quality of our food. I thoroughly enjoy inspiring my team, teaching them new skills and developing new dishes.

I sometimes meet couples before their day to talk through menus and I really enjoy that personal touch. We also love getting feedback and reading the lovely comments from couples after their day – we’re all here to deliver the very best service so when we hear that we did just that, it makes it all worth it.

The food you serve to your guests is a huge part of the special occasion and it’s a privilege to be part of that.

Q. What makes Swancar food so good?

Wade: The team, the produce, the passion, the service!Swancar Farm is a high-end venue, so we’re able to use the best ingredients and develop our menus each year in order offer a delicious variety for our couples – as Head Chef that’s really important to me. There’s something for everyone, from high-end signature dishes to everyday favourites. The passion that we all have definitely shines through in our food.

Q. What makes the Swancar service so good?

Wade: We work really closely with our event team on the day because the way we serve our food is just as important as the quality of food that we serve. Care and attention is poured into the service so dishes are presented to guests just as they were created in the kitchen. Our professional event team do this with a smile, ensuring that your day runs smoothly and that every need is attended to.   

Q. What are your favourite dishes?

Wade: In all of our menus there’s a ‘Chef’s recommendation’ but here are some of my absolute favourites:

Canapes

  • Hot canape: Lobster bisque with chilli and coriander tiger prawns
  • Cold canape: The mini anti pasta served in an expresso cup is pretty delicious and often under appreciated
  • Petit fours: Lemon posset top glazed with a marshmallow

Wedding breakfast

  • Starter: Seared king scallops – I designed this dish when I was 24 years old and it made it into a magazine it’s so good! I also love the Swancar teasing plate as it’s a delightful mix of four different starters
  • Main: Shoulder eye fillet of lamb slow cooked in brown ale – the flavour is immense!
  • Dessert: The steamed orange brandy pudding is a classic dish that’s old fashioned but oh so good. If you can’t decide on one dessert, the duo of mini desserts is a great option as you can choose two from our extensive menu

Evening buffet

  • I love the theatre of the chip shop fish and chips – this is always a winner
  • The whole dressed salmon is a traditional choice that looks very elegant as a centrepiece for your evening buffet
  • The barbeque is fantastic, especially during the warmer months
  • Our new pizza oven is a really nice addition and is proving to be very popular – who doesn’t love a pizza towards the end of the day!
